This recipe is spicy, quick and delicious and is certain to please any seafood lover and best of all – it’s healthy!  They are filling and make for a great weeknight quick meal.  My boyfriend always eats two and is looking for more every time I make this!





4 (5 ounce) skinless Catfish Fillets

2 Tablespoons Cajun Seasoning (or to taste)

4 large Romaine or Red Lettuce Leaves

6 tablespoons Tartar Sauce

4 Multigrain Hamburger Buns, toasted

Sprinkle Catfish evenly with Cajun seasoning.  Spray grill pan or frying pan with nonstick spray and set over medium-high heat.  Place catfish in pan and cook just until opaque in center, 4-5 minutes per side.

Layer lettuce leaves, 1 catfish fillet and 1 and 1/2 TBSP of tartar sauce on each bun.

Suggestion:  Serve these Catfish Po Boys with a platter of accompaniments so everyone can customize their sandwich:  tomato, red onion slices, dill pickles, lemon wedges or bell peppers are just a few ideas!  Also, this can add an extra serving of veggies!
